Thai rice with shrimp and vegetables Ingredients Half a kilogram of fresh shrimp of medium size, or frozen shrimp of medium size peeled and cleaned. Two tablespoons of fresh lemon juice. Four teaspoons of soy sauce, preferably low in sodium. One fresh jalapeno pepper, ground and finely chopped. 1 teaspoon grated fresh ginger. A clove of crushed garlic. A tablespoon of oil. Half a kilogram of asparagus, cut into 14 inch pieces. A small sweet red pepper, sliced ​​thin longitudinal slices. Three cups of rice, cooked to be hot. A quarter cup of chopped pistachios. Method of preparation If we choose frozen shrimp, we have to defrost it first, then wash and rinse with water, let it drain from water until it dries, and put it in a medium-sized bowl. To make the marinade, mix lemon juice, soy sauce, jalapeno, ginger, and garlic. Add the marinade mixture to the shrimp until it is completely covered, and leave the bowl at room temperature for about a quarter of an hour, stirring from time to time. Drain the shrimp well from the seasoning, while preserving it. 

We heat the oil in a large and deep frying pan over a medium-heat fire, and we can add more oil if needed. Stir the shrimp in the pan until fried for two to three minutes, until the shrimp turns pink. Take the shrimp out of the pan, and cover to keep warm. Put the asparagus and sweet red pepper in the previous pan, and stir for two to three minutes, until the ingredients become soft and slightly crunchy. We add the seasoning that we have kept to the pan with the ingredients, and leave the pan on the fire until it begins to boil. Add the cooked rice to the seasoning, so that the rice is cooked half-cooked, add a cup of water, and add the pistachios to the pan with stirring. 

To serve the dish, put the rice mixture in bowls and serving dishes and put an appropriate amount of shrimp on each of them, and decorate with chopped parsley. Rice with shrimp with coconut cream The ingredients 2 cups of rice. Three hundred grams of peeled and cleaned shrimp. Three grains of carrots. A cup and a half of peas.

Preparation Method 

Melt half a stick of butter in a saucepan, add garlic, and stir in the butter, then add the shrimp with a pinch of salt and black pepper, and stir until the shrimp are soft and pink. Remove the shrimp and set aside. Add the chopped onions and stir until wilted, then add the vegetables and rice after washing well. Stir and add the water mixed with coconut cream, add salt and black pepper and leave the saucepan for twenty minutes on low heat. Remove the pot from the heat, add the shrimp and half of the remaining butter, mix well, then serve it directly.
